1. union jack is basicly a name for the current flag of United Kingdom. It is called the Union jack It is made up of three flags form three different countries from England, scotland, and northern Ireland. The term "jack" was occured from the usage of jack staff installed in the bow of ships. As a summary, union jack is the union of three flag representing three countries.

2.St. Patrick's Day is on 17 March honoring Saint Patrick. Saint Patrick is a man who introduces crhistianity in ireland. St. George's day is on 23rd of april honoring Saint George a man who killed a fire dragon in an attempt to rescue a beautifull maiden. St. Andrew's day is on 30th November honoring Saint Andrews who is one of twelve Jesus Christ apostles.
3. Why Southern Ireland is not part of UK? Basicly UK is the union of England, Wales ,scotland and Ireland. The Irish had their independence from the British monarchy in 6th december 1921. Altough the nation had their indepence, six counties in northern Ireland decided to stay within British monarchy. That is why The southern Ireland is not incuded in the UK.
